Best Ever Rice Krispie Treats

Raise your hand if you ate way to much for Easter (Me!!!). Raise your hand if your diet that was supposed to start on Monday has been postponed indefinitely (Me!!). Sigh. On the bright side, I have THE BEST EVER rice krispie treats to share today!


It’s funny because my friends & room mates freak out about these krispie treats. I make all kinds of cookies/cakes/bars which go over well, but when I make these RKTs they lose their minds. Helloooo it’s 3 ingredients!! It hardly even counts as baking! But hey, I aim to please.


I usually make these for my dearest, closest friend and she is really the reason these krispies went from “standard” to BEST EVER. I can’t remember exactly how or when her obsession with these rice krispies started … sometime around middle school I would guess. But once it did, I was doomed to be her rice krispie slave maker until the end of my days I made a toooon of RKTs. And this is basically what would happen: we would be in my parents kitchen making rice krispies. I would add amount of marshmallows called for in recipe. She would taste and insist I add more. I would add more. Repeat this process until the whole bag of marshmallows is incorporated into the rice krispie treats. Fast forward 10 years to her taking board exams (way to go D!) and me making her ultra marshmallowie rice krispies as a study snack.

In my endeavors in RKT making I also discovered a few more secrets to making these treats extra awesome. First, use more butter than called for. The original recipe called for 2 tablespoons of butter. So I use 6. Naturally. Second, use the whole bag of marshmallows. Third, save some mallows to toss in after the cereal has been mixed into the melted marshmallow goodness. Hello, big yummy mallow chunks! Fourth, use a small dish (8×8 works great) in order to get thick, tall, wonderful (huge) rice krispie treats! (Don’t miss my MIND BLOWING tip at the end of the recipe).


Best Ever Rice Krispie Treats

Prep Time: 5 Minutes

Cook Time: 5 minutes

Servings: 9 LARGE rice krispie treats


  • 6 C. rice cereal {such as Kellogg’s Rice Krispies)
  • 6 Tablespoons butter
  • 1 Bag {16 oz} mini marshmallows {divided}
  • Cooking Spray


  1. Generously coat a baking dish with cooking spray (I use a small, 8×8 glass dish in order to get very tall, very large, rice krispie treats).
  2. In a large saucepan, melt the butter over low heat. Let the butter just start to brown. Add the marshmallows, reserving aprox. 1 cup. Stir until melted.
  3. Remove from heat and mix in rice cereal. Once well coated, add in remaining marshmallows. Stir to incorporate. Quickly transfer to prepared baking dish and press into pan. Cool, cut into 9 big squares and enjoy!!!

TIP: Once the mixture is transferred into the dish, lightly spray your hands with cooking spray before pressing into pan. Re-apply cooking spray if krispies start to stick to your hands. Honestly, this works like a charm and is basically the most brilliant idea I have ever had. It also allows you to really smoosh them into the pan, creating nice compact treats.
