30 Minute Cinnamon Streusel Coffee Cake

Hey there! Welcome to the official first post on Holly’s Buns. This post is coming after a couple months of pondering / procrastinating / realizing this is going to be a heck of a lot harder then I thought.  In the last 2 months I have come up with plenty of excuses why I couldn’t get this first post done (not enough time, not enough light for photographing, not knowing how to properly photograph, not having clever enough ideas to write about, etc.) but I think it’s time to (wo)man up and get this blog going. So here we go!

Cinnamon Streusel Coffee Cake. Yum. I have to say I didn’t plan on this being the inaugural recipe of this blog. But the more I thought about it, the more I realized this coffee cake is the perfect place to start. I won’t get weird and start comparing my life to a breakfast food (because I want you to like me and keep reading my blog) so I’ll just tell you a little about where this recipe came from and why I love it so much.

Like so many of the things I hope to share with you, this recipe has been in my family for generations. My Mom has made it so many countless times I doubt she even needs to refer to the recipe. The cake is perfectly light and not too sweet. There is cinnamon streusel swirled into the batter AND crumbled on top. The recipe for this coffee cake lives in my Great Grandmother’s cookbook; a little mecca of timeless recipes that have been passed down through the years. Stay tuned for more fabulous goodies from that wonderful book 🙂

Ok so not only is this coffee cake wonderful and cinnamonie and extra brown sugar strueselie but it is so very very easy! Like 10 minutes of prep easy. And because we don’t know each other very well yet, I feel like we should start out on an honest note. I would love to pretend that I get up nice and early in the morning with a big smile, make my coffee and whip up a delicious breakfast. But because we’re being honest … I’m going to tell you that I couldn’t even write that sentence without legitimately laughing out loud. I’m more of a hit-the-snooze-six-times and sleep-in-till-noon-on-weekends kind of girl. Don’t judge me 🙂 So any breakfast that my very crabby pre coffee self can have done in 30 minutes is a winner in my eyes! Before I share the recipe here are a couple of things:

30 Minute Cinnamon Streusel Coffee Cake


  • 5 Tablespoons Butter {melted}
  • 1/2 C. Sugar
  • 1 Large Egg
  • 1/2 C. Milk {1 %, 2%, or whole}
  • 1 1/2 C. Flour
  • 1 {heaping} teaspoon Baking Powder


  • 2/3 C. Flour
  • 1/2 C. Brown Sugar {packed}
  • 1/4 C. Granulated Sugar
  • 2 teaspoons Cinnamon
  • 1/2 C. Butter
  1. Preheat oven to 375°
  2. Grease an 8×8 glass baking dish butter or cooking spray. Set aside.
  3. In a small mixing bowl make streusel by combining flour, brown sugar, granulated sugar, and cinnamon. Cut in butter with a pastry cutter or 2 forks. Continue to cut in butter until the mixture resembles crumbly sand (a few pea sized chunks are ok) Place in fridge.
  4. Make the cake by first combining melted butter and granulated sugar in a large mixing bowl. Stir well to combine.
  5. Add in egg and milk and stir to combine.
  6. Add in flour and baking powder and mix until just combined. Don’t over mix on this step!
  7. Pour cake batter into prepared baking dish and spread evenly. Add half of the streusel mix and stir to gently incorporate. It does not need to be fully mixed in, just lightly swirled through the batter (think marbling). Sprinkle the second half of the streusel mix over the top of the cake.
  8. Bake at 375° for 15-20 minutes. It’s done when a toothpick comes out with just a few moist crumbs!

    Hi Holly’s Buns,

    I am anxious to try your coffee cake receipe. My kitchen skills are limited so trust this will be a winner for me.

    Loved reading ” about me” and the coffee cake receipe. You have a way with words. Obviously you didn’t spend all your time at OSU partying!!!

    I’d say those three guys are really lucky – especially the one who calls you his girlfriend😉😍😍
